We're a late-night hospitality group in Stratford looking for someone to own and grow the daytime side of our business — food, shisha, weekday and early-evening trade — and bring real structure to how the venue runs. This isn't a maintain-the-status-quo role. We've got a strong late-night operation; what we want is someone to build the rest. You'll own the standard — steps of service, uniforms, briefings, training — and you'll own the numbers: a real P&L for your side of the business, with control over your dayparts and the trade you build. What you'll own Service standards across food, drink and shisha — set them, hold them, every shift Pre-shift briefings, team training and floor presentation The daytime, weekday and early-evening revenue build — covers, food, shisha Your own P&L: revenue, GP and labour cost on your dayparts Operational oversight of the door/security team You'll be a fit if you Have built a daytime or food/shisha trade before — not just run one Read a stock sheet and a GP% as comfortably as you read a room Carry natural authority on the floor without leaning on a title Would rather be on the floor leading than behind a desk Are straight-talking, hands-on, and want to own something and grow it You'll report to the MD and work alongside our GM, who runs the late-night floor.
