Usually — selected nights have free guestlist before a cut-off time, and tickets stay on sale until an event sells out. Each event page shows what’s left.

Can I book a VIP table last minute?

Yes, subject to availability — tables are bookable online up to the day. A £100 deposit books it and counts toward your minimum spend.
